Using pork meat and selected later nerveless and cut the tip of a knife, seasoned with salt, pepper even ground or granules, you get the famous “Corallina” Salami typical of our land. Stuffed into natural casings, is processed with the typical lard and choose lean meats that make it a sweet, tasty and very much appreciated. Aged for 30 days, the reef from 0,800 kg is about 70 cm long.
