Pork couples are obtained from the loin and tenderloin of heavy pigs exclusively from national flocks. The meat is hand-cut and frayed by skilled butchers. The thin strips that are derived remain in a tanning spices and Mediterranean herbs for at least 48 hours. In this way the meat are flavored throughout their thickness. After that, at constant and controlled temperature, is made a slow drying ventilated.
